What To Do With All Those Boiled Eggs?!

Does Everyone have weird dinners you ate as a kid but didn't realize were weird until your husband looked at you as if you had grown a third eye??

I have a few of those.
Here's one:
Cream Egg Over Toast










Ingredients:
  • 2T Butter
  • 2T Flour (+)
  • 1 Can chicken broth
  • 1-2 boullion cubes
  • A little milk (1/4 cup to 1/2 cup)
  • Mustard (1-2T as you like it)
  • 5-6 boiled eggs-peeled and sliced in rounds (preferably dyed!)
  • {optional: cumin, salt and pepper, diced ham}
  • Toast

Melt butter on med. high, in a 2qt. sauce pan, add the flour and whisk around a few minutes. (will be lumpy) Add the chicken broth, boullion and whisk until smooth. Cook stirring often until bubbly. Turn down heat, add milk (create thickness you desire here) add mustard and whisk until combined. Turn off heat and add sliced eggs.

Ladle over two slices of toast and Voila.. weird dinner to help use up the eggs....!

We eat a bowl of leftover rice, with milk, butter, cinnamon and sugar... simple—but better than quesadillas over and over huh? (My oldest eats this for breakfast in fact!)

You know I love ypu Carissa, and you've never steered me wrong before, but I have to say, that looks totally disgusting. Really - yuck! I'm with your hubby on this one!

Carissa, you have some weird dinners. The lettuce/rice one sounds so weird I think I might try it. Although, my husband would NEVER go for that for dinner,.

Ok this scares me a little, not sure I could even stomach it enough to make it.

Oh and the rice is sweet rice, and thats totally normal, lol!

Thankfully I don't have too many eggs left. Flynn chose to smash and destroy all 6 of his. Jay ate 4 of his 6 straight after decorating them and Marisol ate one of hers too. Phew.

However, you have just given me a brilliant idea. The eggs slicked with ham on toast looks delicious BUT I do have a jar of hollandaise sauce in the refrigetaor. I think we'll be having a hard boiled version of eggs benedict tomorrow morning. Thank you.

We eat a variation on this recipe... I'll try to find it for you. Who knows, someone might like it better. Fewer ingredients, I know.

And as a kid I ate "rice soup" many many times. Very cheap meal.

OKAY... here it is. The MUCH simpler creamed eggs recipe.

4 hardboiled eggs, chopped
1 can cream of chicken, undiluted
3 strips bacon, chopped
1 T. chopped parsley

combine, heat, serve over toast. YUMMY!!! Will post pics later. Promise, the chopping actually makes it better. I think...
